Slow-roasted pork shoulder with dark spice rub, tamarind reduction and dark rum. Served in its own juices with red wine caramelized onions.
Morticia's Hips
Boneless chicken thighs braised in chipotle, sour orange and smoked paprika. Glazed with sugar cane molasses and served in their juices with pickled red onion.
Grandmama's Enchantment
Sweet plantains caramelized in black butter, cinnamon, clove and sugar cane molasses. Flambéed with dark rum at the moment.
Lurch's Cellar
Black rice with pigeon peas, recao sofrito, smoked longaniza and olives. Cooked in dark broth of dried mushrooms and bay leaf.
Wednesday's Garden
Purple cabbage, arugula and baby spinach. Roasted beet ribbons, crumbled goat cheese, candied walnuts with anise. Pomegranate and sherry vinegar dressing.
Uncle Fester's Blood
Red wine sangria with dark rum, orange, cinnamon, clove and grenadine. Dark, spiced and profound. One glass included per person.
