    Slow-roasted pork shoulder with dark spice rub, tamarind reduction and dark rum. Served in its own juices with red wine caramelized onions.

  • Morticia's Hips

    “Elegant. Dark. Impossible to ignore.”

    Boneless chicken thighs braised in chipotle, sour orange and smoked paprika. Glazed with sugar cane molasses and served with pickled red onion.

    Sweet plantains caramelized in black butter, cinnamon, clove and sugar cane molasses. Flambéed with dark rum at the moment.

    Black rice with pigeon peas, recao sofrito, smoked longaniza and olives. Cooked in a dark broth of dried mushrooms and bay leaf.

    Purple cabbage, arugula and baby spinach. Roasted beets, goat cheese, candied walnuts with anise and a pomegranate and sherry vinegar dressing.
